Dan Kittredge
Dan Kittredge is the Executive Director, Bionutrient Food Association & The Bionutrient Institute. As a lifelong farmer, educator, and passionate advocate for growing nutrient-dense food, he brings his decades of experience in regenerative agriculture and a deep understanding of soil science. Dan has made it his mission to empower farmers, gardeners, and consumers to unlock the full potential of their crops and landscapes.
Growing up on an organic farm, Dan witnessed firsthand the challenges and opportunities of cultivating healthy, sustainable food systems. Over the years, he developed a keen interest in the intersection of soil health, plant vitality, and human well-being. This journey led him to found the Bionutrient Food Association, a nonprofit organisation dedicated to promoting food quality as the central tenet of health and sustainability.
DR CHRIS VAN TULLEKEN

Prof. Chris van Tulleken is a doctor, scientist, broadcaster, and bestselling author whose work explores the intersection of medicine, public health, and the environment. He is an Associate Professor at University College London in the Division of Infection and Immunity, specializing in infectious diseases and global health. Alongside his twin brother, Dr. Xand van Tulleken, he has become a well-known face in science communication, bringing complex medical and scientific issues to the public through television, radio, podcasts, and books.
In 2023, Chris’s book Ultra-Processed People: Why Do We All Eat Stuff That Isn’t Food… and Why Can’t We Stop? became a critical and commercial success, topping bestseller lists and sparking widespread debate about the role of ultra-processed foods (UPFs) in modern diets. The book has been praised for its rigorous research and accessible storytelling, leading to increased public awareness of the impact of UPFs on health and policy discussions on food regulation.
Chris and Xand launched their first podcast, A Thorough Examination with Drs Chris and Xand, in the summer of 2021. The series quickly topped podcast charts, with the first season following Xand’s journey into the world of ultra-processed food, where he explored its addictive qualities under Chris’s guidance. In the second series, launched in 2022, they examined whether and how people can change their habits and behaviours.
Their unique ability to combine entertainment with science has led to numerous successful TV projects. In 2019, they presented Twinsitute for BBC Two, an experiment-driven series where they and 30 other identical twin pairs tested competing health theories.
Chris’s concerns about antibiotic resistance and the overuse of prescription medications led him to create The Doctor Who Gave Up Drugs for BBC One in 2017. The series, which resonated strongly with audiences, was followed by a second instalment in 2018, focusing on children and their medication use. Continuing his investigative work, Chris explored the effects of ultra-processed foods on children in the acclaimed BBC One documentary What Are We Feeding Our Kids?
In 2017, he also presented The Truth About… HIV, a BBC One documentary featuring support from HRH Prince Harry and Sir Elton John, aiming to challenge misconceptions and raise awareness about the virus.
Chris and Xand are also the presenters of CBBC’s Operation Ouch, the double BAFTA and Broadcast Award-winning CBBC series that teaches children about human biology. Now in its 13th series, the show continues to inspire young audiences worldwide. Their Operation Ouch Live stage show has played to sold-out audiences in London’s West End and Australia.
Beyond broadcasting, Chris has worked as a doctor in some of the world’s harshest environments, including Arctic expeditions and remote jungle regions – Medicine Men Go Wild (2008) saw him and Xand examine the limitations of Western medicine in remote locations.
Chris’s contributions to science and public health have been widely recognised. In 2016, he won the Max Perutz Award for his research on HIV. He became an infection and global health professor at UCLH in 2025.
Dr James Kinross
Surgeon & Author
Mr James Kinross is a reader in Colorectal Surgery and a Consultant Surgeon at Imperial College London. His clinical interest is in minimally invasive and robotic surgery for colorectal cancer. James is currently head of Speciality at Imperial College NHS trust and has had several senior academic leadership roles at Imperial College London, and he is a co-director of an MSc in healthcare design. He is a graduate of the NIHR leadership programme and he was an NIHR Clinical Lecturer in Surgery and an Ethicon Laparoscopic Fellow in Colorectal Surgery. He was awarded a Royal College of Surgeons of England training fellowship during his PhD on the gut microbiome and he was funded by the Academy of Medical Sciences as an early stage lecturer. He is a visiting Professor at the Royal College of Surgeons of Ireland. He is currently funded by CRUK, DASA, UKRI, Horizon 2020 and the EPSRC. He performs translational research into the microbiome and was a co-investigator on the EU funded GROWTH consortium, studying how breast milk influences the co-evolution of the gut microbiome. His first book, Dark Matter, the new science of the microbiome was published in 2023. He is currently supervising seven PhD students, and he has published over 200 peer reviewed papers.
Federica Amati
Nutritionist
Dr Federica Amati PhD, MPH, MSc, RNutr, is a Medical Scientist and Registered Public Health Nutritionist with over 15 years of experience in scientific research and communications. She is ZOE’s Head Nutritionist, Nutrition Topic Lead at Imperial College School London Faculty of Medicine, and head of nutrition science at medical concierge company Wellfounded Health.
Federica is the author of Recipes for a Better Menopause and Sunday Times Bestseller Every Body Should Know This.
Her approach focuses on improving overall dietary quality throughout the life course, using food as the best tool to transform health. She regularly appears in mainstream press, television, radio, and podcasts.
Federica holds a PhD in Medical Science from Imperial College London, a Masters in Public Health (MPH), an MSc in Nutrition from the London School of Hygiene and Tropical Medicine and is an Association for Nutrition (AfN) Registered Nutritionist.
Patrick Holden
Patrick Holden CBE is the founder and CEO of the Sustainable Food Trust, whose mission is to work internationally to accelerate the transition towards more sustainable food and farming systems.
Between 1995 and 2010, he was director of the Soil Association, the UK organic advocacy and certification organisation, where he played a leading role in developing the organic standards and market.
He currently leads a task force on measuring land use sustainability for the Sustainable Markets Initiative (SMI), established by the then Prince of Wales in 2020.
Patrick trained in Biodynamic farming at Emerson College and has farmed for over 50 years on a 300-acre mixed organic dairy holding, now the longest established organic dairy farm in Wales, producing a raw milk cheddar from the milk of 85 Ayrshire cows.
He received a CBE for services to organic farming in 2005 and is Patron of the UK Bio-dynamic Agriculture Association. He became an Ashoka fellow in 2016 and was awarded an honorary doctorate for his international work in sustainable agriculture by the University of Wales Trinity St David in 2022.

Stephanie Moore
Clinical Nutritionist, Physical & Mental Health Coach, Author
Stephanie Moore is a gut health expert, celebrity nutritionist, author and Programme Lead on the Goodwood Gut Health programme. She began her career in the integrated health world in 1991 in the pursuit of discovering what creates vibrant health and wellbeing, and in turn has experience in an impressive breadth of training and specialities.
After training in numerous physical therapy disciplines, Stephanie became a teacher of massage and anatomy and also trained as a personal fitness trainer. Stephanie has also had experience in the corporate world, establishing a corporate stress management company providing on-site massage and stress management seminars at work.
Stephanie has worked in the natural health field for over 30 years as a self-employed natural health therapist, clinical nutritionist, author and health coach. With a Bachelor of Science degree in Nutritional Medicine and a Masters degree in Counselling and Psychotherapy, plus a long history as a multi-disciplinary physical therapist and fitness coach, she combines all skill sets to help people with many kinds of health issues, both physical and psychological with a prevention-first focus.
Stephanie conducts one-to-one nutritional therapy clinics in Surrey and Online offering a comprehensive assessment of her patients’ health issues to then provide detailed, personalised health protocols. With specialist interest in digestive health and the effect of the gut microbiome on metabolic, hormonal and mental health conditions, she works with numerous GPs supporting treatment plans for challenging cases with eating disorders, metabolic chronic disease and cancer, both pre, during and post treatment.
Stephanie contributes to various health publications; is often featured in the media as a health expert and is on the Advisory Board of the SATCC cancer charity. Stephanie published her first book in 2017 called ‘Why Eating Less & Exercising More Makes You Fat!’, which explains why conventional weight loss advice fails and what to do instead to achieve permanent health and weight loss goals. She has also co-authored a book on Super-Foods with doctor of biochemistry and health campaigner, Dr James DiNicolantonio.
Her latest book, ‘Eat Your Brain Happy’, explores nutritional neuroscience and focuses on the critical role of gut health, food, sleep, exercise and other factors known to directly influence the health of the brain.
